Greenest Green Coconut Cilantro Mint Chutney

We asked our friend Kerrilynn Pamer, the cofounder and CEO of our favorite source for natural beauty, CAP Beauty, to share a beloved, everyday recipe. In 2018, Kerrilynn published High Vibrational Beauty: Recipes and Rituals for Radical Self Care together with her cofounder Cindy Diprima Morisse. The book was the culmination of their first years of diving deep into the world of natural beauty and is full of recipes, rites and rituals that help pave the way to a holistic sense of wellness.

With just a few simple ingredients and a versatile mortar & pestle you can easily whip up this verdant sauce. We promise you'll want to put it on absolutely everything! 

This recipe is modified from Rocio Graves beautiful e-cookbook, The Ones. Kerrilynn ladles it over everything: eggs, grain bowls, sourdough, avocado, you name it.

INGREDIENTS:

1/2 cup shredded coconut

1/4 teaspoon Pimenton pepper

Zest from 1 lime

Juice from 1 whole lime

1-2 heads of cilantro

1/2 head of mint

1/2 cup coconut milk

1/4 cup sunflower seeds or pepitas

1’”piece of ginger, skin removed

1/2 teaspoon smoked salt

1/2” of jalapeño or serrano

Cut all ingredients up small and add to mortar + pestle. Smash until a paste forms or until a consistency you like. Add to whatever you desire, and consider this your secret weapon for making all your meals that much more delicious. 

You could also cook the chutney with rice and use coconut milk as your liquid. Add in 1/2 cup of the chutney after bringing rice to a boil and let cook till done. Voila: cilantro rice! It's also wonderful added to soups for a quick and easy way to layer in another dimensional flavor. This'll become a fresh pantry staple.
